From student dream to Southern Italian food truck
Crispy, golden brown and filled with delicious ingredients. That’s the panzerotto, a fried pizza from Southern Italy, and it’s the heart of Papi Di Panza, the food truck that now travels across the Netherlands and Belgium. But how did it all start?
A dream that grew during their student days
The idea came about when the founders were still students. Between lectures, the dream of one day owning their own food truck began to grow. They just didn’t know yet what they wanted to sell, and they didn’t want to settle for just anything. It had to be really good.

Researching in Italy
To find the right dish, the friends travelled all the way to Italy. There they tasted, observed and searched for what they truly wanted to bring home. In Puglia they found it: the panzerotto. This authentic Apulian street food was barely known in the Netherlands. With that, the concept was born: freshly prepared, with ingredients they’re proud of, just like in Southern Italy.

Searching for the right food truck
Next came the food truck itself. The founders searched online and came across many suppliers, including some from China. Still, their main wish was to buy a food truck that simply felt right. Eventually they got in touch with Multiwagon and visited the Experience Center in Holten, where it felt right straight away. They chose a Kitchen Eco trailer 270, fully tailored to their panzerotti concept.
