Indirect grilling is a completely different story. Here, the meat isn’t positioned directly over the embers but instead cooks gently in the hot circulating air—this is the signature discipline for smoker enthusiasts. It takes a bit longer, but the reward is tender, juicy meat with that unmistakable smoky BBQ flavor no regular grill can truly replicate.
