Are you thinking about starting your own food truck? One of the biggest advantages is the high level of flexibility in what you can offer, since it’s a business on wheels. Step 1: Write a business plan

Starting a food truck may sound simple, but in practice there’s often more to it. Before launching your food truck, you should carefully consider what kind of business you want to build and what goals you want to pursue. A well-thought-out business plan helps you take all aspects into account and ensures that no important details are overlooked.
Some key points to consider when writing a business plan:

  • Define the purpose of your plan: Do you want to build an independent business with your food truck, or use it as an extension of an existing operation?
  • Choose a clear structure: A well-structured plan helps with implementation and makes it easier to convince investors or banks.
  • Start small and grow step by step: Test your concept and refine it over time.
  • Keep your plan up to date: Starting a food truck is a dynamic process, so your plan should be reviewed and adjusted regularly.

Step 2: Define your target audience

Analyzing your target audience is a crucial step when starting a food truck. Who are your potential customers, and where can you reach them most effectively?
Key questions for your target audience analysis:

  • Are your customers often on the go and in need of a fast grab-and-go concept?
  • Do you already have an existing business that you want to expand with a food truck?
  • Which foods and beverages are best suited for mobile sales?

When setting up a food truck, you’ll also need a permit for your pitch or location. Depending on the site, this may require approval from a public order office, market authority, or festival organizer.

Step 3: The budget

Starting a food truck involves various costs. Consider whether you want to buy, rent, or lease a food truck.
Cost factors for a food truck:

  • Purchase costs: A food truck can be purchased starting from €9,995.
  • Ongoing operating costs: fuel, maintenance, insurance, staff.
  • Permits and administrative fees (e.g. commercial gas inspections for the food truck).

Step 4: Starting a food truck? These permits are required

To sell food from a food truck, you’ll need several permits and approvals. Here are some of the most important requirements:

  • Instruction under § 43 of the Infection Protection Act (health certificate)
  • Food hygiene training
  • If you plan to sell alcohol, a hospitality permit (alcohol serving license) is required
  • Travelling trade license
  • Police clearance certificate
  • Special use permit (§ 16 Road Act)

Step 5: Insurance for your food truck

When starting a food truck, you should also make sure to arrange suitable insurance coverage. This typically includes:

  • Liability insurance to cover damages to third parties
  • Legal expenses insurance to protect against legal risks
  • Vehicle insurance for the food truck and the equipment inside

The cost of legal expenses insurance is relatively low, but it can protect you from significant financial losses.

Step 6: Trailer licence – yes or no?

Not every food truck can be towed with a standard car driving licence. Whether you need a trailer licence (Category BE) depends on the weight of your food truck.

  • Trailers under 750 kg → no additional driving licence required.
  • Trailers over 750 kg → usually a Category BE driving licence is required.

There are no silly questions—feel free to schedule a personal conversation with our experts.
