Imagine you sell coffee from a Multiwagon coffee concept. A common dosage for a single espresso is around 7–9 grams of ground coffee. This means that 1 kg of beans yields roughly 125–140 cups. If your bean cost works out to €0.09 per cup, and you sell a coffee for €2.75 excluding VAT, the bean cost remains very low relative to the selling price.
If you then budget €0.03 per cup for depreciation of the mobile coffee bar and up to €0.20 per cup for other operating costs, your total cost price is €0.32 per cup. The gross margin is: 88,36 % This indicates a very strong gross margin. Keep in mind this is gross margin, not net profit. Additional costs such as staff time, pitch or event fees, milk / sugar / cups / lids, maintenance, insurance, and downtime can reduce the final profit.
