A good lunch concept doesn’t start with the vehicle, but with what you want to sell. A food truck serving rolls requires a different layout to a compact panini station or a concept featuring freshly made sandwiches.
When choosing a lunch food truck, you should consider, amongst other things:

Not every lunch concept requires the same setup. A panini food truck is often more focused on hot preparation, while a sandwich food truck mainly requires speed, presentation and refrigerated storage.
| Concept | Best suited for | Important layout features |
|---|---|---|
| Food truck for rolls | A broad lunch menu with cold and hot rolls | Refrigeration, worktop space, storage and serving area |
| Panini food truck | Hot lunch products with a compact menu | Preparation space, power supply and safe workflow |
| Sandwich food truck | Fast sales of freshly made sandwiches | Refrigerated storage, presentation and efficient serving |
The best choice depends on your menu, sales volume and location. If you mainly sell during short lunch peaks, a clear workflow is more important than a large product range.

A lunch food truck must be practically designed for daily use. This isn’t just about appearance, but also about workflow, hygiene and storage.
Ensure there is sufficient workspace for preparation and serving, so that rolls, paninis or sandwiches can be prepared and sold in a logical manner. Refrigerated storage for fresh ingredients is also important, as is space for packaging, napkins and stock.
In addition, the food truck must meet the technical requirements of your concept. Consider power supply for equipment, water and hygiene facilities where necessary, and a serving hatch that aligns with the customer flow. Clear branding helps to make your lunch concept recognisable on site.

You can buy or lease a lunch food truck. Buying is particularly suitable for entrepreneurs who want to run their mobile lunch concept long-term and retain full control over the interior, appearance and use. Leasing can be an attractive option if you want to spread the investment and get started more quickly without having to pay the full purchase price straight away.
The right choice depends on your plans. If you want to start with a compact sandwich food truck for markets or business premises, a simple layout may suffice. If you want a more extensive lunch concept featuring paninis, sandwiches, chilled ingredients and hot food preparation, the layout becomes more important. Consider workspace, storage, power supply, serving area and space for branding.
Your sales location also plays a role. A lunch food truck for fixed locations requires a different approach to a vehicle that is frequently used at events or changing locations. During short lunch peaks, a fast and logical workflow is particularly important, so that products can be prepared and served efficiently.
Multiwagon can help you determine whether buying or leasing is a better fit for your lunch concept, budget and growth plans. This way, you can choose a solution that suits not only your menu, but also the way you want to sell.

A lunch food truck works best when the concept, layout and sales process are all aligned. So start with a concrete menu and translate that into practical requirements for the vehicle.

A sandwich food truck must suit your sales approach. A concept for corporate lunches has different requirements to a mobile sales van for festivals or markets.
That is why personalised advice is important. During a consultation, you will discuss the menu, the sales location, the necessary fittings and the desired look and feel. This ensures you avoid choosing a van that is too small, too large or impractical for your lunch concept.
Multiwagon develops mobile catering solutions for entrepreneurs looking to launch or expand their business professionally. For a lunch food truck, this means we don’t just focus on the exterior, but also on the vehicle’s practical usability.
During the consultation process, you can discuss your concept, compare options and determine which model suits your lunch offering.
